Happy Birthday To The DIL

 
Today is Christon's birthday.
She is the mother of my GRANDgirls and wife to my oldest son!
She's a wonderful DIL.
We had a nice Easter dinner yesterday at the home of my other DIL, Jordan and youngest son Travis.
 
The girls hunted eggs after dinner.
They found an equal amount.
 
I think that they had a great day.
 
The Sweetheart and I spoke in church Easter morning.
It was an honor, a privilege and a humbling task.
Can I say, that I'm really glad it's over and that it's Monday.

p.s. I did not take the pictures but it was my camera.
p.s.s. I did my BEST to get that gray goat off that mans face.
p.s.s.s. I am really losing my touch, he wasn't having any part of anything I was offering!
p.s.s.s.s. Yes, I did pick my shirt to match his so we could look like one of those matchy couples for our Sunday Easter dinner with the family. And yes he rolled his eyes and he thinks I'm nuts but he LOVES me.

Sugar Cookie Bars



For all of you who love Sugar Cookies but hate the rolling
 out the dough and cutting all those little bunny's or pumpkins
 or candy canes, just go with these Sugar Cookie Bars!
I am in love with these!
They are very moist and oh so yummy!

Just cut and ice with cute colored icing and you have a very delicious treat!
Sugar Cookie Bars

1 1/2 C sugar

1 C butter, softened

8 oz cream cheese, softened

1 egg

1/2 t almond extract

1 t vanilla

1/2 t baking soda

1 t baking powder

2 1/2 C flour

FROSTING:

1/2 C butter softened

4 oz cream cheese, softened

3 1/2 C powdered sugar

3-5 T milk

1 t vanilla

food coloring

1. In a large mixing bowl or stand mixer beat the butter, cream cheese, sugar, and egg until nice and frothy. About 4 minutes.

2. Add the vanilla and almond extract and beat for 1 minute more.

3. In a small bowl combine the flour, baking powder and baking soda. Mix them around so that all ingredients are well incorporated.

4. Add the flour mixture to the butter mixture and beat for about 2 minutes.

5. Press the dough into a large jelly roll (cookie sheet) pan.

6. Bake at 350 degrees for 20 minutes.

7. Let the pan cool completely.

8. Time to make the frosting! In a medium sized bowl (or your stand mixer) combine the butter and cream cheese. Beat for about 2 minutes.

9. Add the powdered sugar, milk, vanilla and food coloring. Mix for 1-2 minutes or until smooth.

10. Frost your pan of cookies. Cut the cookies into bars and serve!

As a fun decorative option, you could pipe a bit of white frosting onto the bars. Just take about 1/4 of the frosting out of the mixer before you add the food coloring. Put the white frosting into to sandwich sized zip loc bag. Carefully snip the tip and pipe some fun decorations onto the bars.

Friday Shoot Out ~ Scavenger Hunt

This is our first ever scavenger hunt.
The guidelines (thanks Monica) are:

* straight out of the camera, no editing.
* one photo per word.
* three words for each hunt.
* add a fourth photo if you can find all three hunt words in one (or just post this one photo)
* hunt area includes your town, surrounding areas, surrounding countryside.

The three words for this hunt (thanks Dawn Treader) are: round, square, triangular.

I haven't been in my town much this week so I shot where I was at, which was still in the state of Georgia, Andersonville.
Andersonville is north of us about 3 hours drive.
It's such a small town, if you blink you will miss it.

Round

In back of the truck to my left I found the square.


Triangle
The triangle was just perfect as I looked across
the street at the tiny post office.

Lunch Date



The weather was perfect yesterday and so we ate outside.
This was not my lunch date but the lady sitting at the next table next to us.
This furry friend ate at least 6 french fries.
He just kept begging for food and she kept feeding him.
I don't think that was his first rodeo.
This must be the way he has lunch every day.
