Tasty Tuesday


Grandma Bonnie's Original
Pineapple Drop Cookies

Cookies:
4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup (2 sticks) butter
2 cups granulated sugar
2 eggs
1 (15-ounce) can crushed pineapple
in its own juice, drained (save the juice for glaze)
1 teaspoon vanilla extract

Glaze: (optional)
4 tablespoons butter
1 pound powdered sugar
Juice from canned pineapple

Instructions:
1. Preheat oven to 350F. Spray a baking sheet with nonstick cooking spray. 2. To prepare cookies, sift flour, salt and baking soda together and set aside. Beat butter and sugar together until light. Add eggs; beat until well combined. Add pineapple, vanilla and flour mixture. Mix well. Drop by heaping teaspoonfuls on pan. Bake 12 minutes.


3. To prepare glaze, beat butter until smooth. Slowly add powdered sugar and pineapple juice, 1 tablespoon at a time, until mixture is the consistency of a glaze. Spoon over cookies while they’re still warm. Makes 5 dozen.

I saw this recipe in the Sunday newspaper insert American Profile
I just felt the need to try it. They were Wonderful! Rich but light, almost like a pound cake flavor. The pineapple must make these very moist! They turned out great for a new recipe. It's a keeper!

This sure has been a crazy week.

Every channel for days now has been showing the life and times of Michael Jackson. It's been on every channel including the TV guide channel. I can't get away from it!

I finally found a channel that hasn't run one thing on M.J.

It's the weather channel!

I like to watch the weather channel.

I like to know how miserable I am!

We've been experiencing the 'dog days' and it isn't even August yet.

Watermelon and Mo

We got a watermelon from the farmers market this morning. The girls couldn't wait for me to get it cut. They were watching PBS and I was in the kitchen cutting the melon. I made the first cut and in a split second Mo was at my feet crying for some. I couldn't get it cut fast enough for him either. He didn't hush until I put him down the rind.



This is the only human food this cat will eat. He is strictly a dry cat food cat. But he loves him some watermelon!

Tasty Tuesday


Katherine over at Smoky Mt. Cafe posted this recipe a while back and I've been meaning to try it and I'm so glad I did! This one is a keeper! Thanks Katherine.


Artichoke Bread

¼ cup butter

3 garlic cloves, pressed


1 (14-ounce) can artichoke hearts, drained and chopped

4 ounces shredded Mozzarella cheese


1 cup grated Parmesan cheese

½ cup sour cream


1 French bread loaf

Salt and freshly ground black pepper

2 ounces shredded cheddar cheese


Preheat the oven to 350 degrees. Melt the butter in a skillet over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds.


Add the artichoke hearts, Mozzarella cheese, Parmesan cheese and sour cream. Stir to blend. Remove from the heat and cool.


Slice the bread lengthwise and scoop out some of the center. (Note: You can crumble the pieces of bread and add to the artichoke mixture if you wish.) Spoon the artichoke mixture evenly into the bread shell and sprinkle with the cheddar cheese.

Place each half on a baking sheet and cover lightly with aluminum foil.


Bake for 25 minutes, then remove the foil and bake for another 5 to 8 minutes or until the cheese melts completely. Cut into slices and serve warm.

Unseasonably HOT!


At 5:30 pm yesterday
afternoon it was 100*
with the heat index of 113*
Swealtering heat!



You know it's going to be a long

night when you hear a strange

squeal coming from your air

conditioning. It was so loud that

you could hear it from the front

yard. Sounded like a cat

with it's tail stuck in the door.

We called, John Ponsell at Universal Heating

and Air Conditioning to get on

their list for this morning.

We were in luck he was close

by on another service call

and came over with in 30

minutes. How's that for service?

Not sure what a service call on

a Father's Day Sunday nights

going to cost but guaranteed

it'll be worth it!

He said, "I hope it will get you through the night."

(it did :)

He will be back around lunch time today with a new motor. From Travis:That was UNIVERSAL HEATING and AIR. He is the best I've found.

I hope that this isn't an indication

of how the rest of the week

is going to go.

I am so THANKFUL FOR AIR CONDITIONING!

HAPPY FATHER'S DAY
to all the wonderful fathers in my life.
I was suppose to go to church with my daddy today in Jacksonville, FL. He was singing in the choir at Stake Conference. Today was a special day in that they were dividing two Stakes into 3 stakes. I'm so sorry I missed hearing my daddy sing and witnessing history in the making. We got home last night around 8:30 pm from being gone 8 days. Sweetheart got out of the truck not feeling well and then started running a fever about an hour later. I'm not sure what is wrong but it could be accumulation of many things. He was only a little better this morning so we didn't drive the hour and a half. My sister and brother 's family got to be there and hear daddy sing with the choir.
I'm jealous but wouldn't leave Harry.
We vacationed with the GRAND~girls and their parents as well as Christon's mom and dad. We went to Branson, MO. We had a lot of fun but it was a long ride. All total around 2100 miles driven in the extreme heat. Again, glad to be home.

Just miserable.

Tasty Tuesday

I've had this cookbook since the 80's. It's the work of Flo Anderson. She was in charge of the bakery and recipes that were used at Emmeline and Hessie's, a restaurant I worked at for years, way over 10 years.

The recipes in the book are awesome. I was looking through it the other day and decided to make the Pina Colada Muffins.



You'll need a few things.
I was surprised that I had everything to make these except Rum extract. I just used my Madagascar Vanilla in place of the Rum they were wonderful!



The recipe makes a doezen, but when I opend that big can of pineapple and coconut stuff ther was enough to make two batches. I made the first batch muffins and the other batch in a loaf pan.

We liked the loaf better.


Pina Colada Muffins
2 cups flour
1 Tablespoon backing powder
1/2 cup sugar
1/2 teaspoon salt
2 eggs beaten
3/4 cup coconut milk or pina coloda mix
1/4 cup melted butter
3/4 cup drained crushed pineapple
1/2 cup coconut
1 teaspoon rum extract

Combine all dry ingredients in large mixing bowl. In another bowl mix eggs, coconut milk and butter. Pour into dry mixture and mix quickly just to blend- batter will be lumpy. Do not over mix! Stir in pineapple and coconut and extract. (I added a cup of nuts to the 2nd batch that I made in the loaf pan and it was wonderful!) Fill well greased muffin pans or use paper cups. Bake at 400* for 20 minutes and then start checking every minute or so. Do Not over cook (like I did) Makes 1 dozen large muffins.

Sunday Stills

This weeks assignment was Water Towers or Silo's. I was able to get both of these in Nahunta, GA. but neither one floats my boat.

We are traveling and I saw some beautiful Silos and lots of interesting water towers, after taking these two pictures. But the Sweetheart was driving and he wouldn't stop every time I wanted to take a picture. I'm not good at 'Drive By's' so needless to say I was stuck with these.
