This was his last year's birthday picture with his requested Birthday cake.
Like last year he has requested me to make my carrot cake again for his birthday.
If you haven't made this cake yet, since it's been on my blog for over a year now, you really should!
Jordan made one last week and took to an office birthday party and it was a hit.
You really can't go wrong, I promise, you'll love it!
Just ask anyone that has had it, they'll tell ya how good it is, yum.

Carrot Cake
2 cups all purpose flour
2 cups sugar
2 teaspoons baking soda
2 teaspoon cinnamon
1 teaspoon salt
1 -1/2 cup vegetable oil
4 eggs
3- 4oz. jars of carrot baby food (like stage 2)
1 8oz can crushed pineapple, drained
1/2 cup chopped pecans
In mixing bowl combine all dry ingredients. Add oil, eggs and baby food. Mix on low speed until well blended. Stir in pineapple and nuts. Pour into two 9 inch cake pans or three 8 inch pans. Bake at 350* for 35 mins. or until it passes the tooth pick test. (when the tooth pick comes out clean)
Cream Cheese Icing
1 stick of butter (1/2 cup)
1 -8oz. block of cream cheese
3 or more cups of powdered sugar
1-1 1/2 cups chopped pecans
Blend butter and cream cheese until creamy. Start adding sugar and a drop or two of milk until you get the right consistency. Then blend in the nuts and ice completely cooled cake.

My husband loves carrot cake, but I've never made one for him. I will definitely try yours. We love to eat sweets.
Happy Birthday to your boy. How old is he? I bet he's funny. I know a few Libra men and they have the best sense of humors, always joking and laughing.

Your "Big Baby" looks a lot like my "Big Baby"! He's 29 and is a big boy with a beard. That cake looks delicious. Can I tell you a funny carrot cake story? My oldest, when he was 10 years old, got very upset when I made a carrot cake for his birthday. He was so mad that he spent the birthday party time in his bedroom. It's now a family joke and he admits he does like carrot cake now.
I'll have to try this recipe and make sure he gets some!
He has such a great birthday (wink wink - it's mine too - ha ha!).

Happy Birthday to your baby. Hope he enjoyes the cake. I've made the cake using your recipe several times, and it is DELICIOUS!! My church family loved it, also the teachers at school wnat me to make another when I have time.
