Tasty Tuesday

Pineapple Pecan Cake with Thick Cream Cheese Frosting

Mix together 2 cups flour,

2 cups sugar,

and 2 teaspoons baking soda in a bowl.

Now add 2 eggs,

a 20 oz can crushed pineapple with its juice,

and 1 cup chopped pecans, (I toasted mine.)

(I also added a cup of coconut, just because)

Mix these ingredients just until moistened.

Pour into a 9 x 13 GREASED

(I used Bakers Joy)baking pan.

Bake at 350 for bout 30-35 minutes or

until toothpick says its okay to come out.

LET CAKE COOL COMPLETELY BEFORE FROSTING

Frosting
To make this absolutely delicious cream cheese frosting, you'll need to mix all these ingredients together till smooth, 1 8oz cream cheese softened, 1 stick butter softened, (I used a half a stick of butter) 2 to 3 cups confectioners sugar, sifted if you want, and 1 tablespoon, yes, tablespoon of vanilla.

With the addition of coconut It's the moistest cake ever. I've not tried the original recipe before I started adding my coconut. Don't think I ever will. It's the easiest recipe too.

Yummy! I don't have hardly anything for it, and good thing, cuz It would not last 2 minutes after I made that thing..

Thanks a lot Gigi.....you should see the shelf on my butt that's gonna grow bigger cause of this recipe.............oh, maybe you shouldn't see it, but man, I need to get into my summer bikini! (or not)

Oh, I want to eat it, truly I do. CAN'T ---EVIL-----CALORIES----I am trying to loose weight to fit into a wedding dress by oct. 3rd (oh wait, I won't be wearing a wedding dress----we are going to wear blue jeans, yup, country wedding)
so, maybe I'll bake that sucker up after all

Delicious! My daughter made a recipe very similar to that one and put the cake in cupcake liners. They were SO GOOD!

I thought you were trying to confuse us with the day!

Gigi, this sounds divine and I think the added coconut probably impoved the original recipe. I am definitely going to try this some day soon.
